The fruit is pressed directly and fermented in vat followed by 18 months of elevage in bariques
whereby all botrytised grapes are eschewed
but is rich in clay loam about 3 feet below the surface
The wine sees a short skin maceration of approximately one week before being spontaneously fermented and aged on the lees in concrete egg
