2021 Fumey-Chatelain 'Le Zouave' Arbois Chardonnay Walter Scott Racked to neutral barrel forThis is the first comeback of La Zouave, a cuve originally made for the first time in 2015 but not made since. It is a blend of all the old vine Chardonnay plots planted across the estate. The younger vines are instead used to produce Crmant. Chardonnay is pressed and ferments in a mixture of 228L barrels and foudres. Ageing takes place in the very same vessels and lasts approximately 12 months. The wine is then racked and feeds in to tank to age for
