This was hand-destemmed and fermented on skins for 14 days then aged for 10 months in barriques
limestone rocks and some dashes of lemon juice
Method: Only on skins for a short time (a mixture between none and four days)
sulfur is never added

Vinified and aged entirely in old barrel. Gentle oxidation and richness separates this stylistically from Manus Vignes de Montgueux. 1 bottle per customer.
