2017 Les Vignes de Paradis Terroir du Leman 'Un P'tit Coin de Paradis' IGP Vin des Allobroges, France Hobo Wines Grapes: Pedro XiménezVariety: Chasselas Vine Age: Planted in the 1990s Terroir: Glacial moraines, molasse, yellow clay. Western exposure. Viticulture: Organic (official conversion), biodynamic methods Vinification: Picked 2 to 3 times at harvest, gentle pressing, indigenous yeast fermentation (16C) in 500 liter demi muids. Aged 7 to 9 months, light filtration (white earth), no SO2 added until bottling (30 mg l max).
