Florence and her husband Franois are 8th generation farmers with eighten hectares in Villy. Most of their vines are betwen 60 80 year old including a tiny slice of the Chablis Premier Cru Les Fourneaux, the only Premier Cru to face due South. Harvested on September 21st, 2021, and after a traditional vinification, the wine ages on its fine lees for 8 to 9 months in stainless steel vats, before resting in oak barrels
